The hottest month of the year might be behind us, but there’s still plenty of time to enjoy a deliciously refreshing cocktail as we unwind and relax at the end of a busy day. This recipe by Grace Stevens is sure to become a favourite.
Berry Fruity Rum Cocktail
- 45ml rum
- 250ml berry juice
- 15ml Chambord (or any raspberry liqueur)
- 100ml sparkling lemonade
- 120g frozen strawberries
- handful of ice-cubes
- 90g fresh raspberries
- a few sprigs of thyme
In a chilled jug mix together rum, berry juice, Chambord and sparkling lemonade and set aside.
In a blender, place the ice and frozen strawberries and blend for a few short bursts. Don’t allow the fruit to get too small.
Half fill two glasses with the frozen strawberries. Fill the glass with the cocktail, top off with raspberries and a sprig of thyme. Serve immediately.
