This is a good side dish or meal on its own.
Ingredients:
- ¼ cup olive oil
- 1 medium brinjal
- 1 red onion cut into chunks
- 2 garlic cloves
- 2 teaspoon dried oregano
- Pinch of dried mint (or fresh)
- 2 coloured peppers – seeded and sliced
- 5 or 6 baby marrows cut into chunks
- 2 tablespoon tomato paste
- 1½ cups water
- About 100g feta cheese (1 block)
- Small handful of freshly chopped parsley
- Good pinch of sugar
- Salt and pepper to taste
- Handful of black olives
Method:
- Turn the oven to 170°C with the shelf in the middle.
- Cut the onion and brinjal into chunky pieces and crush the garlic. Cut the peppers in half and take out the seeds and also cut into chunky pieces (all equal sizes) and cut the baby marrows into chunky pieces.
- Heat the oil in a large pan and fry the onion, garlic and brinjal until nicely browned.
- Put these ingredients into an oven proof dish. Add the other vegetables and dried herbs, salt and pepper – except the feta, tomato paste and sugar.
- Toss together.
- Mix the tomato paste with 1½ cups water and a pinch of sugar and pour over the vegetables
- Bake for about 45 minutes at 170°C until vegetables are tender and the sauce has reduced.
- Toss through fresh herbs – oregano or parsley and add crumbled feta cheese on top and sprinkle with a few black olives.
