There are staple party snacks that always go down well with kids. So if you’re at a loss as to what snacks to serve at your kid’s party, why not go back to basics and try this simple recipe?
Lamingtons
Ingredients:
- 4 extra large eggs
- 375ml castor sugar
- 250g butter or margarine
- 750ml cake flour
- 10ml baking powder
- 5ml cream of tartar
- 2ml salt
- 250ml milk
- 5ml vanilla essence
- 200g packet of desiccated coconut
Chocolate Sauce:
- 500ml sugar
- 125ml icing sugar
- 80ml cocoa
- 250ml water
- 45ml butter
Method:
Preheat the oven to 180°C.
Beat the eggs and castor sugar together. Melt the butter and add to the mixture, beating well.
Sift the flour, baking powder, cream of tartar and salt together and fold alternately with the milk and vanilla essence into the butter mixture.
Spoon into a greased baking pan (34cm x 24cm) and bake for 15 – 20 minutes.
Allow to cool and cut into squares.
Chocolate sauce:
Place all ingredients into a saucepan and heat to boiling point.
Using a fork or kitchen tongs, dip the squares of cake into the chocolate sauce and then toll them in the coconut. Place on a wire rack until set.
