Elsie Mauvis, who for many years was involved in the kitchen and until a few years ago still went into the Ile Maurice restaurant one or two days a week, has died at the age of 91.
Affectionately known as “Madame”, Elsie worked for many years alongside her sons Jean and Robert Mauvis at the Umhlanga restaurant, and lived a life which largely revolved around a love of food and involvement with her beloved family.
Top Durban food critic Anne Stevens described Elsie as “a legend in the industry. She was elegant, stylish and paid attention to detail.”
Jean, with much guidance over the years from Elsie, runs the Ile Maurice kitchen, while Robert is the face of the business and manages front of house and business affairs. Robert is a well known personality on the Durban business scene having owned the famous St Geran restaurant before heading north.
When asked her trade secrets, Elsie said, “Bring it to fast heat then cook slowly, slowly and use only the best ingredients. That and attention to detail.”

The vindaye at Ile Maurice is legendary. A bit of a signature dish, I’d say.
