We tried this recipe a few times, and it turned out great every time. So yummy!
This should take around 10 minutes of preparation, and 30 minutes of cooking time.
Ingredients
- 200 grams of unsalted butter (cut into small cubes)
- 100 grams of sugar (plus extra for sprinkling)
- 300 grams of plain flour (sifted)
Method
Preheat your over to 160 degrees Celsius, or 140C for a fan oven, or Gas mark 3.
Line a tray with baking paper.
Mix together the butter and sugar. You can either get your hands dirty for this, or you can use an electric whisk! Mix together until it’s smooth. Gently add the flour, and continue to mix until it’s all been added. Be careful not to work the flour too much, or your shortbread will not be crumbly. Use your hands to squeeze the mix into a ball of dough.
Gently roll out the dough to about a quarter of an inch thick. Add flour to your work surface to prevent the dough from sticking. Cut into shape using a cutter or with a knife.
Transfer the biscuits onto the baking tray, and place in the fridge to cool for 15 minutes. You can alternatively roll your dough into a thick sausage shape, and after cooling for 15 minutes in the fridge, it can be sliced into round biscuits using a knife.
Sprinkle each biscuit with a small pinch of sugar, and bake for between 15 and 20 minutes, until golden brown.
Transfer the biscuits to a wire rack, and leave to cool.
Additional Extras
If you want to spice things up a little, you can add various ingredients depending on your personal preference, such as ginger, chocolate chips, raisins, candied orange peel or nuts.
