Wine and dine with Flagstone

Some of the finest wines from Flagstone have come to Durban and the uShaka Marine World Cargo Hold Restaurant! Join Cargo Hold chef Warren Frantz and Lucia Smith from Icon Wine Marketing on Thursday 24 October for a fine spread and sampling of great wines.

The event will begin with a welcoming splash of Rietvallei Brut and Pink Bubbly before settling in for the starter – Norwegian salmon, confit and tartar with capers, shallots and dill accompanied with a baby leaf salad… and what has been described as Flagstone’s most “technical” wine – the Flagstone Freerun Sauvignon Blanc.

Flagstone’s whites are created using the same philosophy as its reds – with as little unnecessary mechanical intervention as possible. Flagstone’s white wines have a fascinating combination of weight and freshness and are known for their intense presence, persistence and longevity.

Flagstone’s Reds are crafted using the age-old traditional method of manually punching down the fermenting cap by hand, ensuring wines of balanced elegance with gorgeous soft tannins and amazing longevity.

One such wine is the Flagstone Dragon Tree (Cabernet/ Shiraz/ Pinotage) that  accompanies the first of the Cargo Hold’s mains – Sous Vide Karoo Lamb (braised shank and cutlet, onion and garlic purée, pea and asparagus mousse, fricassee of pan-seared mushroom and fondant potato with a fennel jus).

Known as Flagstone’s cult wine, this underground blend comes with consistent tannin structures and a fruit burst on finish, revealing and unmistakable French influence.

The second of the mains – Springbok and Caramelized Quail (pan-fried Springbok, smoked quail, macadamia and lavender crumble, rhubarb butter) – is perfectly partnered by Flagstone’s Music Room Cabernet Sauvignon. The product of patience, practice and a favourable season from Mother Nature, this is a complex blockbuster with creamy-textured tannins and a serious palate weight balanced by naturally soft acidity.

The sweetest of endings to a perfect evening will be the Spiced Coconut Pannacotta and blue Cheese (coconut crumble, passion fruit puree, pineapple sorbet and toasted cashew nut brioche) and the Flagstone “Last Word” Port, with its subtle fruit flavours.

To finish, there’s tea, coffee and Friandise.

This evening of fine wine and fine dining is priced at R325 per person. It begins at 6:30pm for 7pm.
